About the Book
This practical book of food microbiology introduces students to some of the methods used to detect and enumerate microbes in food and food handling equipment, as well as the growth processes of food microorganisms, the biology of spores and sporeformers, and the establishment of microbiological criteria in food safety programmes. The main purpose of this practical book is to guide students through a process of development of microbiological techniques, conducting experiment and interpretation of data. In this book the laboratory exercises are designed to give the students “Hands-on” laboratory experience to better reinforce certain topics discussed in theory part. This book contains microbiological examination of cereal products, fruits & vegetable, meat & meat products, fish & poultry and composition of bacteriological media, reagents and most probable table (MPN) tables. The enumeration of spoilage causing microbes as well as detection method of pathogenic microbes also discussed for important food products as per requirement of regulatory bodies.
